Who’s ready for a tea party? I know I am!
I first made this delicious apple cake last week and I’ve already made it twice since then. I was seriously craving some apple pie but had no milk, sour cream or yoghurt, and apparently you can’t bake a nice apple pie without any of those. I could’ve run to the store, but…it was a dark and stormy night, you know the rest.
So, here it is. A delicious simple apple cake put together in less than an hour and which has seriously become my favourite dessert at the moment and my partner’s as well 🙂
This apple cake is perfect for those rainy afternoons when all you want to do is curl up with a good book, a nice cup of tea and just relax. Or, mix it up and top it with some nice vanilla ice-cream! Whatever your heart desires.
If you’re feeling fancy you can decorate the cake with confectioners sugar – I didn’t because I really liked how the top came out. I mean, just look at it! Isn’t it beautiful?!

- 120 grams all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 113 grams butter at room temperature
- 135 grams sugar
- 3 tablespoons water you can also use milk or dark rum, if you're feeling fancy
- 2 large apples cored and cut into small cubes
- 1 teaspoon cinnamon powder
- 1 teaspoons vanilla extract
- 2 medium eggs

- Preheat the oven to 176°C and grease a 9-inch springform with butter.
- In a small bowl, whisk together the flour, baking powder and salt.
- Using a handheld mixer or a stand mixer with the paddle attachment, mix the butter and sugar until light and fluffy (a few minutes on medium speed). Add the eggs, one at a time, beating well and scraping down the sides of the bowl after each egg. Add the vanilla and water (you can also use dark rum for a richer flavor, or milk). Next, add the flour mixture and mix on low speed until combined. Using a rubber spatula, fold in the chopped apples.
- Scrape the batter into the prepared springform and sprinkle evenly with one tablespoon of sugar. This will make the top a bit crispy and delicious.
- Bake for 40 minutes or until cake is golden and a toothpick inserted into the center comes out clean. Allow the cake to cool.
