Apple Crumble Pie Recipe

I made this pie dough yesterday and was planning on baking a blueberry pie today. But since yesterday I couldn’t help myself but bake a batch of  blueberry muffins, I decided I just couldn’t bake a blueberry pie today, so I just went to the store and buy some Lady Pink apples. This is the first time I’m baking an apple pie and it turned out better than expected!

If you decide to try this recipe (and I recommend you do!), please don’t forget to buy some vanilla ice-cream! It’s definitely a must.

Don’t feel intimidated by making a pie dough from scratch – I know it can be a headache sometimes, but the satisfaction you get after it’s priceless. And it will get better in time, trust me!

P.S: this recipe makes a double pie crust so you can freeze one for another time.

Apple Crumble Pie

The most delicious apple pie you will ever make from scratch. Make sure to serve with vanilla ice-cream!

Ingredients
  

1 homemade pie crust

  • 350 g flour
  • 25 g sugar
  • 1 teaspoon salt
  • 280 g butter
  • 6 tablespoons ice water

Crumble topping

  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon cinnamon
  • 1/2 cup butter

Filling

  • 8 apples
  • 1/2 tablespoon lemon juice
  • 1/2 cup white sugar
  • 3 tablespoons flour
  • 1 teaspoon cinnamon

Instructions
 

Pie Dough

  • Combine two thirds of flour with sugar and salt in the bowl of a food processor and pulse twice to incorporate. Spread butter chunks evenly over surface. Pulse until there is no dry flour and dough just begins to collect in clumps. Using a rubber spatula, spread the dough evenly around the bowl of the food processor. Sprinkle with remaining flour and pulse until dough is just barely broken up. Transfer the dough to a large bowl.
  • Sprinkle with ice water, then, using a rubber spatula, fold and press the dough until it comes together into a ball. Divide the ball in half. Form each half into a small disk. Wrap tightly in plastic and refrigerate for at least 2 hours before rolling and baking.

Crumble Topping

  • Combine all topping ingredients using a fork until completely mixed and crumbly. This step is really easy.

Filling

  • Peel, core, and slice the apples into thin slices. Toss apple slices with sugar, lemon juice, cinnamon, and flour.
  • Layer the apple slices in pie shell and top apple slices with topping until they're all covered.
  • Bake at 2020 for 15 minutes, reduce heat to 175 degrees and bake an additional 45-55 minutes. (Poke the center of the pie to make sure the apples are soft all of the way through).
  • Enjoy warm or at room temperature, with a scoop of vanilla ice-cream on top. Do not skip this step!

Notes

Please keep an eye on your crumble topping. If it starts to brown too early, cover the pie with foil to keep it from burning.

    This looks absolutely delicious, I’ve always made crumble but never a pie. Will have to give it a try, it seems pretty simple to follow although it probably won’t look as nice as this!

    Mmmm, I’m planning a marathon cooking session to stock my freezer and I’d love to include a pie like this. BUT – I’m afraid it wouldn’t make it to the freezer. I’d have to eat it right away! 😉
