Living in Oslo, the options for eating amazing ribs are limited. I’ve tried plenty of restaurants, some were better than the others (You gotta stop by Way Down South if you’re ever around, their barbecue is absolutely amazing. Is this how good Americans have it?), so when another lockdown hit us hard, the only viable option was to cook them myself. But I live in a small apartment with no outdoor grill so I was in for a challenge. Or so I thought.
This recipe is actually super simple and easy, you only need patience and plenty of time, no extra skills required. Ah, and a good barbecue sauce! For these ribs I made a trip to the local butcher shop and I suggest you do too!
There are plenty of recipes online for making ribs at home in the oven and it gets confusing after reading ten different recipes with ten different temperatures.
In the end, I followed my gut, went for the slowest temperature I could, mixed my favorite spices and the result was glorious. I think the pictures speak for themselves, right?

1 rack of ribs

- 1 slab baby back ribs I made two! so doubled the spices
- 1 1/2 tablespoon paprika
- 1 tablespoon chili powder
- 1 tablespoon granulated onion
- 1 tablespoon granulated garlic
- 1 teaspoon dry mustard
- plenty salt and black pepper
- 2 cups BBQ sauce store bought or homemade

- Preheat your oven to 107°C.
- In a small bowl, mix your spices. Season your ribs with the seasoning by rubbing it in as much as you can. You want the ribs to be absolutely covered to the point you can't see any meat. (Or that's how I like it, is it too spicy?!)
- Cover the baking dishes with aluminum foil and place in the oven. I covered the ribs separately in aluminum foil because the baking tray was too large to cover it at once.
- Let the ribs cook for about 3.5 - 4 hours. After 4 hours, add layers of BBQ sauce on the ribs and return to the oven uncovered for an additional 30 minutes. At the end, I like to broil them for 3-4 minutes for that extra burnt/crispy look.
- Remove from oven and be amazed!
