Double Chocolate Nutella Muffins

  • 310g flour
  • 50g cocoa powder
  • 170g sugar
  • 2teaspoons baking powder
  • 1/2teaspoon baking soda
  • 1/4teaspoon salt
  • 175g chocolate chipschocolate chunks
  • 1large eggroom temperature
  • 240ml buttermilk*
  • 100ml coconut oilor vegetable oil
  • 2teaspoons vanilla extract
  • 12-24teaspoons Nutella
  1. Preheat the oven to 200C and grease a 12 hole muffin pan very well or line it with parchment paper.
  2. Whisk together the dry ingredients (flour, cocoa, sugar, baking powder, baking soda and salt) in a large bowl. Fold in the chocolate chips/chocolate chunks.
  3. In another medium bowl, whisk together the egg, buttermilk, oil and vanilla extract. Add the wet ingredients into the dry mixture and mix slowly until combined. Careful not to over-mix.
  4. Divide the batter evenly between 12 muffin slots, filling only half way. Spoon 1-2 teaspoons of Nutella into the centers, then spoon the remaining batter on top of each muffin.
  5. Bake them for 15-17 minutes. Allow to cool for 10 minutes in the pan, then transfer them to a wire rack to cool completely.
Recipe Notes

* If you don’t have buttermilk, you can make your own by simply measuring 1 cup (240 ml) of milk and stir 1 tablespoon of lemon juice. Let stand for 5-10 minutes, then it’s ready to use.
